Kale and Beetroot Salad

Its Summer well now Autumn in Sydney. The weather is warm, sunny and absolutely beautiful. Its the time to go for jogs, strut on the beach and swim.  I am in the pursuit of getting fit and healthy and so have decided to include a lot of fresh ingredients that are really good for you. There is no way one can ignore the health benefits of Kale. It is a type of cabbage and is considered a super food, rich in Beta Carotene and Vitamins, it also helps reduce cholesterol  It works well in salads, crisped up as chips or even throw some in a soup or dal for good measure. This salad uses beautiful roast beets and kale in a nice zingy lemony dressing. Give it a go, your tummy will thank you for it :-)

In a large bowl add the kale, cabbage, shredded carrot, radishes and roasted beets and give it a good mix. Now add the dressing and mix so that everything is well combined and coated with the dressing. Ready to serve.
