Its Summer well now Autumn in Sydney. The weather is warm, sunny and absolutely beautiful. Its the time to go for jogs, strut on the beach and swim. I am in the pursuit of getting fit and healthy and so have decided to include a lot of fresh ingredients that are really good for you. There is no way one can ignore the health benefits of Kale. It is a type of cabbage and is considered a super food, rich in Beta Carotene and Vitamins, it also helps reduce cholesterol It works well in salads, crisped up as chips or even throw some in a soup or dal for good measure. This salad uses beautiful roast beets and kale in a nice zingy lemony dressing. Give it a go, your tummy will thank you for it :-)
Recipe
Serves 4
Ingredients
2 Carrots shredded or julienned
1/4 Cabbage shredded
2 Beetroots
1 Bunch Kale finely chopped
6 Small Pink Radishes or 1 large white radish
1/2 cup Fresh coriander chopped
1/2 cup Mint leaves chopped
Zest and Juice of 2 lemons
1 Clove garlic grated
2 Red chilli finely chopped
3-4 tbsp Light Extra Virgin Olive Oil
4 tsp Cracked Pepper
Salt to taste
Method
Preheat oven to 180 C. Give the beetroots a good wash. Drizzle some olive oil, salt and pepper and wrap it individually in foil. Put them on a baking tray and into the oven for an hour and half or till tender. Once the beets are roasted cut them into little cubes.
